« Welcome for this starters recipe with the Sweet Bordeaux wines. We’re going to work on Foie gras we’re going to need a lobe of duck Foie gras, some pepper, agar-agar, some Sweet Bordeaux and some salt. For this recipe, we’re going to make a quick Foie gras terrine. I just remove the main vein. Now, I’m going to make some nice slices of at least 3-4 centimetres like this. Now, we’re going to salt them : a small pinch on each foie gras slice. We’re going to add pepper also. Let’s start heating up the frying pan without any fat and we’re going to fry our Foie gras slices. I take my spoon and I’m going to feed the Foie gras, that is to say I will scoop the melted fat and pour it on the foie gras. I’m going to add salt and pepper. Now, we’re going to put our Foie gras slices in a small plastic tub. It will get cold quicker. Or you can also place it in a white china terrine dish. As the foie gras is still warm The inside of your slice will continue cooking. We’re going to take our terrine and press slightly to allow the extra fat to drip. I’m going to take a spoon, make a small hole and pour my half-glass of Sweet Bordeaux. It is better to leave it to rest for 24h in your refrigerator. Now, let’s make the jelly. We’re going to add the agar-agar. Let’s count 30 seconds in our head. Now let’s whisk and turn off. We’re going to leave the jelly to set slowly. You should never put it in the fridge. In 10 or 15 minutes it will be ready. We’re going to dice it into nice little cubes. We’ve left the terrine to rest in the fridge for 24 hours.
