Geographical location

Its sweet wines come from three cities, Cérons, Illats and Podensac, located about forty kilometers south of Bordeaux.

Its grapes are Semillon and Sauvignon.

They are vinified

They are vinified in accordance with traditional methods and in small volumes. They benefit from 12 to 18 months vinification, in vats or barrels depending on the crus.

Its manual harvesting permits to pick, by successive selection, grapes ideally over ripened by noble rot.

What you must remember

The village of Cérons is named after the river Ciron that bathes it. This tributary of the Garonne brings nocturnal mists conducive to the development of Botrytis cinerea. This fungus, also known as noble rot, attacks the skin of grapes, thus promoting drying. The pulp of the berries turns into a golden jam that concentrates sugars and aromas.
