Sweet pumpkin pie

So, Thanksgiving is approaching, here is a classic that Americans love to enjoy with family: the « Pumpkin Pie ». To accompany this dessert, choose a sweet fresh white wine from Bordeaux.


For the pastry:

  • 225 g (8 oz) of flour
  • 125 g (4.5 oz) diced unsalted butter
  • A pinch of salt
  • 75 ml (2.5 fl oz) water
  • Juice of a lemon quarter


  • 450 g (16 oz) of pumpkin mash
  • 3 freerange eggs
  • 1 egg yolk
  • 100 g (3.5 oz) of sugar (95 g {3.3 oz} of sugar and 5 g {0.2 oz} treacle)
  • 10 cl (3.3 fl oz) of maple syrup (or golden syrup)
  • 40 cl (13.5 fl oz) cream
  • 4 g (13.5 fl oz) of cinnamon powder
  • 4 g (0.15 oz) of ginger powder


  1. Preheat the oven to 220 ° C (430o F).
  2. Peel the pumpkin and cut the flesh into pieces. Place them on a baking sheet lined with parchment paper, cover the paper with water and bake for about 1 hour.
  3. Let it cool and mash the pumpkin pieces into a smooth puree using a blender.
  4. Meanwhile, prepare the pastry: mix the butter, flour and salt using a machine and then add the water and lemon juice.
  5. Once a homogeneous paste, roll it into a ball, wrap it in plastic wrap and let rest in refrigerator for 1 hour.
  6. On a floured surface, roll out the dough into a  26 cm (10 inch) mold covered with parchment paper. Place a second sheet of the pastry, held by dry beans. Cook for about 40 minutes.
  7. For the topping, whip  together the eggs, egg yolk and sugar. Add the other filling ingredients one by one, mix until smooth. Bake at 180 ° C (350° F) for another 40 minutes.

Cool, it is ready to serve with a glass of sweet white wine from Bordeaux!
